    Trachanas with Kopanisti


    2 tbsp olive oil
    1 onion, cut into small cubes
    1-2 cloves of garlic (or as much garlic as we want)
    450 ml tomato juice
    800 ml water
    1/2 level tbsp sugar
    1 cup sour trachanas


    In a saucepan, heat the olive oil over medium heat and sauté the onion and garlic for 1-2 minutes or until slightly softened. Add the tomato juice, water and sugar.

    When they come to a boil, add the trachanas little by little, stirring constantly. When the mixture starts to boil again, reduce heat and simmer until the soup thickens, stirring now and then.

    Finally, add 2 tbsp kopanisti cheese, stir and serve immediately with bread. If you can’t find kopanisti, you can add feta or blue cheese.
