1 cup of olive oil
1/2 cup of cognac
1 cup of fresh sqeezed orange juice
1 orange peel ( Organic Orange )
3 cups all-purpose flour, spooned and leveled
1 teaspoon baking soda
1 cup light brown sugar
1 large egg
1 teaspoon pure vanilla extract
2 teaspoons ground cinnamon
sesame seeds (optional)
1. In a medium bowl, whisk together the olive oil, the juice, the cognac and gradually add the sugar, the cinnamon, the orange peels and the baking soda.
2. With an electric mixer mix for 2 to 3 minutes. Beat in the egg and vanilla. Reduce speed to low and gradually add the flour mixture, mixing just until incorporated.
3. Form the dough into balls (each equal to 1 level tablespoon).
4. Heat oven to 190°C. Bake until the edges are golden, 12 to 14 minutes. Cool slightly on the baking sheets, then transfer to wire racks to cool completely.
